Full job description

The Kitchen Helper / Commis I is responsible for assisting the kitchen team in daily food preparation, maintaining cleanliness and organization of the kitchen, and ensuring food safety and sanitation standards are followed at all times. The position supports smooth kitchen operations while learning proper Japanese kitchen techniques and standards of Sushi Shokunin.

Duties and ResponsibilitiesFood Preparation

  • Assist chefs in preparing ingredients for daily operations.
  • Wash, peel, cut, and portion vegetables, seafood, meat, and other ingredients.
  • Prepare basic sauces, garnishes, and mise en place.
  • Assist in sushi preparation, tempura station, robata, hot kitchen, or cold kitchen when assigned.
  • Follow standard recipes and portion control.

Kitchen Operations

  • Maintain cleanliness and organization of all kitchen stations.
  • Ensure proper storage and labeling of ingredients using FIFO (First In, First Out).
  • Assist in receiving and checking deliveries.
  • Refill stocks and ingredients during service hours.
  • Dispose of waste properly and maintain cleanliness of garbage area.

Sanitation and Food Safety

  • Follow HACCP, food safety, and sanitation procedures.
  • Keep workstations, utensils, chopping boards, and equipment clean and sanitized.
  • Maintain personal hygiene and proper grooming standards.
  • Report spoiled or expired items immediately to supervisors.

Team Support

  • Assist senior chefs during busy operations.
  • Follow instructions from supervisors properly and professionally.
  • Work efficiently with the kitchen team to ensure smooth service.
  • Participate in kitchen opening and closing procedures.

Qualifications

  • High school graduate or vocational culinary graduate is an advantage.
  • Previous kitchen experience is an advantage but not required.
  • Willing to learn Japanese cuisine and kitchen operations.
  • Physically fit and able to work long hours in a fast-paced environment.
  • Can work under pressure with minimal supervision.
  • Flexible with shifting schedules, weekends, and holidays.
