About the Role:
We are looking for a detailed-oriented Dimsum Helper to join our kitchen team. This role focuses heavily on the high-volume preparation, assembly, and artistic pleating of our signature siomai and dumplings. If you have excellent hand dexterity, speed, and love working in a fast-paced team environment, we want to hear from you!

  • High-Volume Pleating: Wrap and pleat dumplings (like gyoza, sharksfin, or basic chive dumplings) with consistent fold counts.
  • Siomai Assembly: Efficiently pack and mold meat fillings into wonton wrappers, ensuring open-faced siomai items are uniformly sized.
  • Filling Preparation: Mix, grind, and season pork, shrimp, and vegetable fillings according to standard recipes.
  • Wrapper Management: Dust, separate, and handle delicate flour and egg wrappers to prevent tearing or drying out.
  • Steaming Operations: Arrange products neatly on bamboo or stainless steel steamers and track precise steaming timers.
  • Station Upkeep: Maintain a clean, sanitized, and organized prep table compliant with food safety standards. [1, 2, 3, 4, 5]

Requirements & Skills

  • Hand Dexterity: Proven ability to perform repetitive hand movements quickly and precisely.
  • Visual Consistency: Sharp eye for detail to ensure every siomai and pleated item looks identical.
  • Basic Kitchen Math: Ability to weigh fillings accurately to maintain strict portion control and minimize food cost waste.
  • Stamina: Capability to stand at a preparation station for long operational shifts.
  • Cleanliness: Strong understanding of hygiene, especially when handling raw meat and seafood fillings.

What You Will Do:

  • Carefully portion and wrap open-faced siomai and traditional pleated dumplings.
  • Maintain a consistent shape, weight, and 6–8 fold pleat count across hundreds of items daily.
  • Prep fresh ingredients, manage delicate wrappers, and monitor steaming stations.

What We Are Looking For:

  • Prior experience in a dimsum or Chinese kitchen is a big plus, but passion and manual dexterity are highly valued.
  • Ability to stand for long hours and maintain high sanitation standards.
  • Must pass a brief, practical 15-minute pleating trade test during the interview.
