UTILITY is responsible for maintaining the highest standards of cleanliness, sanitation, and organization throughout the central production facility. This role involves operating industrial dishwashing equipment, cleaning heavy food production machinery, managing waste removal, and assisting with receiving and storing large bulk inventory shipments.

Key Responsibilities

1. Industrial Sanitation & Warewashing

• Operate large-scale, industrial tunnel or flight-type dishwashers to clean pans, trays, utensils, and bulk food containers.
• Manually wash, rinse, and sanitize oversized prep equipment (e.g., 80-quart mixer bowls, industrial kettle parts, large roasting pans) using a three-compartment sink setup.
• Ensure all washed items are completely dry before organizing and storing them in designated inventory zones.

2. Facility & Deep Equipment Cleaning

• Sweep, mop, power-wash, and squeegee kitchen floors, walk-in coolers, freezers, and dry storage areas daily.
• Deep-clean heavy commissary machinery (e.g., automated packaging lines, commercial slicers, industrial ovens, steam kettles) following strict manufacturer and safety guidelines.
• Sanitize high-touch surfaces, stainless steel prep tables, walls, and floor drains at the end of every shift.

3. Waste Management & Chemical Safety

• Empty, clean, and reline all kitchen trash, recycling, and organic compost bins throughout the day.
• Safely compress and dispose of cardboard boxes and bulk packaging materials using a baler or designated dumpsters.
• Handle, store, and dilute industrial cleaning chemicals according to OSHA and safety data sheets (SDS) regulations.

4. Receiving, Inventory, & Logistical Support

• Assist the loading dock team in receiving bulk ingredient shipments, using pallet jacks to transport goods into freezers, coolers, or dry storage.
• Rotate stock using the First-In, First-Out (FIFO) method to ensure food safety and minimize waste.
• Restock the production line with clean equipment, pans, and tools so culinary teams can work without interruption.

Role Requirements & Physical DemandsPhysical Endurance Alert: This is a highly physical role performed entirely on your feet in an environment that can range from hot and humid (near dish machinery) to very cold (walk-in freezers).

• Lifting Capacity: Ability to repeatedly lift, push, pull, and carry items weighing up to 50–60 lbs (e.g., bulk flour sacks, heavy mixing bowls, full trash bins).
• Stamina: Ability to stand, bend, reach, twist, and walk for extended shifts (typically 8–10 hours).
• Environment: Comfort working in environments with wet floors, high humidity, exposure to hot water/steam, and extreme temperature fluctuations (entering walk-in freezers at 0°F / -18°C).
• Certifications: Food Handler’s Card/ServSafe Certification is usually required or must be obtained within 30 days of hire.
• Schedule: Flexibility to work non-traditional hours, including early mornings (production start times), late nights, weekends, and holidays.
