Job Summary

The Korean Special Chef blends deep-rooted cultural culinary traditions with modern techniques to curate specialized menus, oversee kitchen operations, and manage a specialized team. They ensure strict adherence to flavor profiles, premium food presentation, and high food safety standards.
Key Responsibilities
1. Menu Development & Innovation
  • Curating authentic recipes: Designing traditional menus featuring core Korean specialties like premium Bulgogi, intricate Bibimbap, specialized stews (Jjigae), and complex banchan side dishes.
  • Research and development: Combining traditional flavor profiles with modern, global, or local culinary trends to create unique fusion or contemporary dishes.
  • Artistic presentation: Setting precise standards for high-end plating, presentation, and decorative food displays.
2. Culinary Execution & Specialty Cooking
  • Mastering complex techniques: Executing exact technical methods unique to Korean gastronomy, including deep fermentation (e.g., house-made Kimchi), precise meat-marination, and open-flame grilling.
  • Handling elite service: Personally, preparing specialty dishes for VIP guests, private tasting sessions, or high-profile events.
  • Quality control: Monitoring taste, texture, and correct temperatures of raw and cooked items throughout the service shift.
3. Kitchen Operations & Inventory Management
  • Strategic sourcing: Procuring specialty Korean ingredients, seasonal vegetables, and premium meats from trusted suppliers.
  • Financial accountability: Managing food cost controls, tracking inventory levels, minimizing waste, and handling sales forecasting.
  • Station oversight: Setting up kitchen apparatus, commercial grills, and specialized knives while supervising total workflow.
4. Team Leadership & Training
  • Staff supervision: Directing, scheduling, and coordinating the daily tasks of sous chefs, line cooks, and kitchen helpers.
  • Skill mentorship: Conducting specialized training sessions to teach junior staff complex plating styles and traditional Korean cooking methods.
  • Regulation enforcement: Maintaining strict compliance with global food hygiene laws, corporate safety programs, and sanitation standards.

  • High-volume service execution: Managing rapid-turnaround culinary operations to deliver premium Korean dishes directly to active casino players and high-limit lounges without compromising quality.
  • Menu adaptation: Designing high-quality, easily consumable Korean street-food inspired dishes, bento boxes (Dosirak), and finger foods tailored for the fast-paced casino environment.
  • Extended hour coverage: Overseeing late-night and 24/7 kitchen staffing structures to support continuous casino floor operations.
2. In-Room Dining (Room Service) Integration
  • Transport-ready plating: Developing specific plating and packaging techniques that preserve the exact temperature, texture, and presentation of Korean dishes during transit to guest suites.
  • Cross-functional coordination: Working closely with hospitality service teams to ensure seamless timing between kitchen dispatch and in-room table setup.
  • Customized VIP menus: Creating bespoke, luxury Korean dining menus and hot-pot experiences tailored for in-room VIP and celebrity guests.
