Full job description

  • Graduate of Culinary Arts, Hotel and Restaurant Management, or a related field.
  • Minimum of 5–10 years of progressive culinary experience, with at least 3–5 years specializing in Chinese cuisine in reputable hotels, restaurants, or fine-dining establishments.
  • Extensive knowledge of authentic Chinese regional cuisines, including Cantonese, Sichuan, Hokkien, and Beijing-style cooking.
  • Proven expertise in Chinese cooking techniques such as wok cooking, roasting, steaming, braising, dim sum preparation, and live cooking stations.
  • Strong background in menu development, recipe standardization, food costing, inventory control, and kitchen operations management.
  • Demonstrated ability to lead, train, and supervise kitchen teams while maintaining high standards of food quality and consistency.
  • Thorough understanding of food safety, sanitation, HACCP, and local health regulations.
  • Experience managing high-volume banquet, buffet, and à la carte operations in hotels or large-scale food service establishments.
  • Strong organizational, leadership, and problem-solving skills with the ability to perform effectively under pressure.
  • Excellent communication skills and ability to work with multicultural teams.
  • TESDA certifications, culinary certifications, or specialized Chinese culinary training are highly preferred.
  • Previous experience in luxury hotels, integrated resorts, or internationally recognized Chinese restaurants is a significant advantage.
  • Ability to develop innovative dishes while preserving the authenticity of traditional Chinese cuisine.
  • Physically fit and capable of working flexible schedules, including weekends, holidays, and extended operational hours.
